In the last year I have transitioned our family to paleo/primal! My daughter was having some issues with wheat/gluten. We slowly started cutting gluten from her diet and she started to feel better! So after much research and investigation we found the paleo lifestyle! What a transformation it has made on all of our lives! I can honestly say I have never felt better - and have shed some unwanted pounds in the process - YAY!
I decided today that I would post more frequently and include you on my journey through being a military wife, entreprenuer, mom, and our transition to a paleo lifestyle! I am going to post new recipes and share my outcomes through my new found love of food photography!
I decided that I was going to make some snacks today - so I headed over to www.pinterest.com/amyhensley and I found this recipe through http://mylittleme.com/paleo-chocolate-peanut-butter-cups-primal/!
Paleo Chocolate Peanut Butter Cups (Primal)
A delicious fix for that sweet and/or chocolate craving for those living the paleo/primal lifestyle.

Ingredients
- ½ cup Organic Extra Virgin Coconut Oil, divided
- ½ cup High Quality Cocoa Powder
- ½ cup Natural Almond Butter
- ¼ cup Raw Honey
**I added about 3 strips of bacon {cooked & chopped into little pieces}
Instructions
- Melt half the coconut oil in a small saucepan.
- Blend all other ingredients in a food processor or blender until well blended.
- Add the melted coconut oil to blender.
- Blend just until mixed. (if you blend too long, it may separate.)
- Pour into paper muffin cups to a half inch full.
- Place in freezer for 10 minutes or fridge for 30 minutes until firm.
- Store in refrigerator in a sealed container.
**I did not blend or put in food processor - I melted the coconut oil and stirred in the remaining ingredients - and it turned out great!

Aren't you lucky - you get not one but TWO recipes today! We have used +George Bryant 's Spicy pineapple chili several times - and tonights seemed to be better than usual! Spicy Pineapple Chili
Ingredients
- 1 pound bacon, cut into thin strips
- 2 medium onions, diced
- 2 bell peppers, diced
- 2 jalapeños, diced (seeds optional)
- 4 cloves fresh garlic, minced
- 2 pounds, grass fed ground beef
- 1/4 cup chili powder
- 2 teaspoons ground cumin
- red pepper flakes (optional)
- sea salt to taste
- black pepper to taste
- 1 (20-ounce) can of diced pineapple
- 1 (15-ounce) can of tomato sauce
- 1 (14-ounce) can of fire roasted diced tomatoes
Instructions
- Preheat a large Stock Pot or Dutch Oven over medium heat (You can do this in the Crock Pot as well, see notes below)
- Brown your thin strips of bacon in your pan
- Add in your onions, peppers, jalapeños, and garlic and continue to cook, stirring often for 5 minutes or until your onions become translucent
- Now add in your Grass fed Ground Beef, chili powder, and cumin and stir until your ground beef is cooked through
- Add in all your remaining ingredients, stir well, and increase heat until your chili comes to a boil
- Once boiling, reduce the heat to low, cover, and simmer for 45 Minutes
Notes
For the crockpot: 1. Brown your bacon in a saute pan and then place in your crockpot 2. Saute your ground beef in the bacon fat until cooked through and then add to your crockpot with all the remaining ingredients 3. Cook on low for 4-6 hours and Enjoy
